After opening Les Petite Canailles, we felt the pull to keep building—staying in downtown Paso Robles, but this time with a Spanish flair.

S’Aranella became our next chapter, shaped by the same spirit, hospitality, and love for food that brought us here in the first place. Opening a second restaurant wasn’t about repeating ourselves; it was about expanding the conversation, creating a space that feels rooted in place while still carrying the spirit of where we’ve been.

S’Aranella is a mix of old faces and new ones—a team that blends familiar hands with fresh energy. Some have been with us since the early days, others are joining the story for the first time, but everyone shares the same commitment to craft, care, and showing up for one another. Together, we’re building something that feels lived-in, honest, and very much alive.

Our Team

Julien Asseo

Born and trained in France, Chef Julien brings a classically grounded French approach shaped by years of experience in fine-dining kitchens, where precision, technique, and respect for product are paramount. Julien worked for Joel Robuchon for 4 years as a sous chef, until he made his way to Restaurant Guy Savoy at Caesar’s Palace, eventually making his way up to Executive Chef. With all that deep rooted French experience why Spanish food? Well, Julien also spent years traveling to Spain both as a child and into adulthood. Although his resumé looks very French, his home cooking often speaks of the Costa Brava.

From paellas cooking in the red rocks of Las Vegas to back yard dinners of tapas and jamon. Julien holds a deep love for the cuisine. When the opportunity came to open a second restaurant he knew it was going to be about the culture and dining of Spain.

Courtney Asseo

Before she owned and operated restaurants on the west coast, Courtney was studying film at the New York Film Academy in New York City and later earning a degree in Theatre Studies from UNLV. Through these years of artistic studies the restaurant world became her steady companion. Working her way through restaurants and bars in New York and Las Vegas, she found herself drawn to the rhythm, energy, and human connection that hospitality demands.

She honed her skills behind the bar at Todd English’s restaurants before stepping into management, eventually becoming Bar Manager at DB Brasserie by Daniel Boulud in Las Vegas. Known for her calm presence, strong work ethic, and intuitive sense of hospitality, Courtney developed and led teams, shaped guest experiences, and learned how thoughtful service can define a restaurant as much as the food itself. Today, this North Carolina native, has transformed years of travel, work, and experience into genuine love for hosting which informs every part of S’Aranella—creating a place that feels welcoming, intentional, and deeply personal.

Owner/ Operations Manager

Sarah came to the Central Coast by way of Birmingham, Alabama, bringing with her a deep love of bars, people, and the culture that lives in between a good drink and a great conversation. Her career has taken her from managing bars in the South to leading programs along California’s Central Coast, shaping spaces that feel welcoming, energetic, and effortlessly dialed-in. Along the way, she built a reputation for strong leadership, sharp instincts, and a genuine care for both guests and the teams behind the bar.

At S’Aranella, Sarah draws on her wide-ranging experience, she creates thoughtful, balanced cocktails that nod to the drinking traditions and classic spirits of Spain, while still leaving room for curiosity and play. Her approach is equal parts intention and fun—serious about quality, never too serious about itself—and it sets the tone for a bar program that feels lively, warm, and unmistakably hers. If she had her way, her bio would simply say “She makes drinks”

Alex Wolfe was born and raised in Cambria, California—a true Central Coast native with a deep connection to the region, its people, and its wines. His career in hospitality has been shaped in some of the most prestigious dining rooms. Julien and Courtney found a unique individual in Alex that they knew would make the Les Petite Canailles stronger. Alex helped develop an award-winning wine program rooted in thoughtful selection, balance, and a strong sense of place. More importantly Alex helped develop one of the finest service teams on the coast.

As General Manager of S’Aranella, Alex brings together his dual strengths as an operator and wine expert. He oversees daily operations, builds wine lists, and leads staff training with a strong focus on hospitality and service. Above all, Alex cares deeply about the guest experience—believing that great food and wine shine brightest when paired with warmth, attention, and a genuine sense of welcome.
